Peaches are a summer fruit and chocolate is king of winter. Chocolate peaches are a link between two very different seasons, perfect to enjoy on a summer evening.
1Syrup the peaches:
wash and scald the peaches in boiling water for 2 minutes, rinse with cold water and drain. Peel and remove stones. In a saucepan, dissolve the sugar with water over moderate heat and bring to a boil, cooking for about 10 minutes. Add the peaches and cook over a low heat for 7-8 minutes, pouring the syrup over the peaches. If the syrup isn't thick enough, cook until reduced, then pour over the peaches.
2For the topping:
melt the chocolate in a double boiler, add the cream, butter, sugar and chopped hazelnuts, mix using a wooden spoon.
3Pour hot over the half peaches with syrup that are arranged on a serving dish. Finish by decorating with pistachio crumbs.
This simple and delicious recipe can be embellished with whipped cream and fresh mint leaves.
