If chocolate is the food of the gods... then fritters are the queens of Carnival! Chocolate and raisins are the right ingredients to make your family's Carnival irresistible.
1Soak the raisins in a small amount of rum. In the meantime, bring to a boil 250g of water with the butter and a pinch of salt. Remove from heat, pour in the flour and mix until the mixture separates from the bottom of the pan. Let cool, then mix with an electric mixer, adding the eggs one at a time, then the raisins, chocolate chips and a small glass of rum.
2Heat a frying pan filled with oil; when very hot, drop small spoonfuls of the mixture in, one by one. Remove the fritters after they puff and are golden and place on a paper towel.
3Keep warm and serve the fritters while still hot, dusting with powdered sugar.
Use a pastry syringe to add a little jam or custard inside the fritters.
